Perfect Gravy

Your Thanksgiving deserves the best.

  • 3 tbsp. butter
  • 3 tbsp. all-purpose flour
  • 1 c. Pan drippings
  • 1-2 c. low-sodium chicken stock (or turkey)
  • kosher salt
  • Freshly ground black pepper
  • 1 tsp. minced fresh thyme leaves
  • 1 tsp. minced fresh sage leaves


  1. Melt butter in a small saucepan over medium heat. Whisk in flour and cook for 1 minute until the mixture is golden. Whisk in pan drippings. (If you have more than a cup, use it and reduce the amount of broth!)
  2. Bring mixture to a boil and simmer gently until the it has thickened slightly. Stir in fresh herbs. Whisk in 1 cup of broth and return mixture to a simmer. Season with salt and pepper. Simmer to 10 minutes, gradually adding more stock if the gravy is too thick. Check for seasonings.
