Roasted Italian Mushrooms

INGREDIENTS

2 Cups Mushrooms
1/2 Cauliflower, cut into small florets
1 Cup Cherry tomatoes
1 Cup Fennel, cut in half
2 Tbsp Olive oil, divided
1 Tbsp Apple cider vinegar
1 Garlic clove, minced
1 Tsp Sea salt
1 Tsp ground pepper
1 Tbsp Italian seasoning

Start by preheating your oven to 350°F.

In a large bowl, mix mushrooms, tomatoes, cauliflower, and fennel. Then add apple cider vinegar, olive oil, sea salt, pepper, garlic, and Italian seasoning.

Spread mixture onto a baking sheet and drizzle with remaining olive oil.

Bake for 25 minutes or until vegetables begin to soften.
